We are currently conducting a study to test how well bacteria and cells attach to different surfaces.
We are also using a co-culture model with fibroblasts and S. gordonii.
Does anyone know a way to determine the vitality of the individual populations on the surface - either only that of the fibroblasts or only that of the bacteria?

The simple method is to isolate the DNA from your sample of interest and select organism-specific genes for PCR, do qRT-PCR to proportionate the quantity of the cells at any given point of time. You can monitor the growth of cells at different time points.

I don't agree with above answer as you want to check vitality.
The best way for this is culture and doing colony counts for bacteria and use dye like Methilen blue if my memory serves me right to check and count your fibroblasts cells.

You could use the Live/Dead kit with fluorescent microscopic observation as part of viability test for bacteria.
You could use Trypan Blue dye exclusion test and light microscopic analysis for fibroblast cells.
