If you are trying to evaporate an organic solvent, it is not good practice to do so in a refrigerator. Moreover, doing so in a refrigerator that is not explosion-proof incurs risk of fire and explosion. As for the rate of evaporation, this depends on many variables, as Hyde Chen has pointed out.
