Yes, like Mohammed said, methanol is more polar than ethanol which is more polar than butanol.
As for solvent fractionation of extracts, there are many ways to do it. The best way might depend on which compounds you are looking for, if you are interested in a particular class of compounds, so you may want to try several different ways to see what works best. You can try partitioning between water and either chloroform or diethyl ether.
Thanks for your clarification; on question 2 what I want to ask is that, I am going to fractionate the extract using the already mentioned solvents so once I disolve the extract in water then which solvent will be first, second and so forth; as Mr. Mohammed pointing polarity of solvent depends upon dielectric constant (but while I'm reading some material says diethyl ether is less polar than chloroform so start with DEE then by chloroform but the other materials says the reverse)!!!
