Once I'm evaporating 80% methanolic plant extract using Rota vapor, I was putting the concentrated extract under oven-drying @ 40 oC, But it is about one months more and still not drying and in a concentrated form, so what shall I do to dry the extract. Thanks

This is the most common problem for the polar solvent extract for natural products. If you have the equipment available, I would suggest that you dilute the extract with water and freeze dry the sample. This will keep a large surface area and help to remoce more solvent. Concentrating a nautural product extract can trap solvent in due to the high solids and dissolved content. If you are not sure about adding water, then try tertiary butanol - it freeze drys very easily.

Polar constituent might themselves (without containing water) constitute a liquid matrix, look for natural deep eutectic solvents (NADES) and solvent-evaporation method.
On the other hand Freeze-Drying as recommended by Rob can help in my experience. Not sure if this experience is contradictive to the NADES phenomenon.

Thanks all, valuable comments but We don't have lyophilizer for freez drying so I wanted still more suggestion for any alternative ways to facilitate drying.
You can freeze-dry your sample which can as well preserve the phytonutrients in your extracts.
