I am wondering whether cytokines such as TNF alpha, IL1 beta,..) are sensitive to temperature values as 50-60°C and might loose their biological activities.
I cannot get an answer through google as it is giving results regarding ELISA temperature conditions...

I have some experience about cell culture in high degree at 45, 50 C as heat shock protein will be induced and increase its level of expression (mRNA) and it may have a role in decrease level of cytokine .
Cytokines might become inactive. I know for a fact that the level of cytokines decrease at high temperature. They are very sensitive.
Many cytokines are notoriously unstable, which makes sense since they evolved to work at close range and low concentrations. In the past, I have had problems with loss of TNF activity even at room temperature for relatively short periods (0-2 hours). You could do a proliferation bioassay if you wanted to be sure using TNF-dependent cells.
