1) I am curious on what solution should I used to dilute the ACE enzyme to respected concentration? is it the same regardless of what solution? or the activity will be differ accordingly to the solution. The solution which I found used to dilute is either Sodium Borate Buffer, Sodium Phosphate Buffer and also distilled water

Use the same buffer for dilution of the enzyme that you use in your assay. Do not use water. Best option is to dilute just before use as even the buffer dilutions will not help with storage after dilution and your stock may have other stabilizing agents like glycerol.
