Use Tween 80 for your experiments. Start with 2 % in first formulation and add 0.5 % increments up to 5 %. Observe the best formulation which seems stable after 7 days storage at some elevated temperature.

But why tween 80?According to HLB value, tween 20 is a solubiliser & O/W (oil in water) emulsifier ?which seems like it will be a better carrier for my hydrophobic substance to mix with water and maltodextrin to create an emulsion.

HLB value provides you with an idea of emulsifiers choice for your desired formulation. However, to obtain a stable emulsions you need to perform experiments as I provided you with a scheme. Even you can mix two emulsifiers i.e. one with low HLb and other with high HLB to exactly obtain a HLB which matches with your oil's HLB value, then it will be stable emulsion without trials.

This information might help. Tween 20 has more hydroxy groups than Tween80. However, Tween20 works better in some experimental environments while Tween80 works better in other environments. There are no hard and fast rules since many factors affect emulsion stabilization

The dissolution temperature is too high. For Tween enough 50C. At higher temperature Tween begins to break down. For stable emulsion enough 0.1-0.5 %.

you can compare easily between Tween 80 and Tween 20 by mixing your oil with each one of them separately in ration 1:1 at 50 C. then dilute these mixtures with water in ratio 1:1 (mg/ml)then evaluate their transmittance % on spectrophotometer at 650 nm. according to the obtained data, you can choose the surfactant which give the highest transmittance % because High transmittance % of emulsion meaning high solubilization capacity of surfactant for oil which also means higher the emulsion area consequently greater the emulsification capacity of the surfactant

Doing a research papeetr on this, using oil and water with 1% of tween 20 and looking at the effects of it using a constant RPM. Can anyone explain the theory on tween 20 and why it creates a layer of cream ?

Selection of emulsifier like Tween 20 or Tween 80 is depending upon which oil and solvent has taken for making of emulsion. Required HLB for every oil and solvent is different .First you calculate the required HLB for your oil phase and then select the right emulsifier. E.g. Oil like mineral oil, silicone oil, castor oil or aliphatic hydrocarbon requires required HLB around 10. So select emulsifier which has HLB around 10 to get stable emulsion. Aromatic hydrocarbon always requires slightly higher HLB emulsifier.

80 tween is often toxic

Dear Dhananjay Gole, As I am using silicon oil as carrier. Then SDS, TWEEN 80 and CTAB will work or not?

Is there supporting literature that says tween 80 is "often" toxic? It is used to permeabilize cells, so of course high conc would be toxic. However high conc of any surfactant should be toxic.

use some methanol or longer chain alcohol with water, then it will remain clear
