Fermentation was performed by inoculating Lactobacillus kefiranofaciens in cheese whey. I have separated the biomass after 72 h of fermentation and I want to measure exopolysaccharide i. e. kefiran in the fermented broth. Following a method described by Cheirsilp et al. 2018, I have precipitated kefiran by adding cold ethanol. My concern is, Is there any possibility to precipitating of sugars such as lactose or proteins present in the whey along with kefiran? Could you please suggest me regarding this or refer me standard protocols? Thanks in advance!
