For porosity measurement I am using the following equation:
Percent porosity = (M2 - M1) / pV × 100
Where M1 and M2 are the mass of the hydrogel before and after immersion in absolute ethanol, respectively; p is the density of absolute ethanol and V represents the volume of the hydrogel.
I am confused about how to measure 'V' volume of hydrogel?

Assuming your hydrogel is an irregular shape and you can just measure it's dimensions the easiest way would probably be via displacement. Fill a measuring cylinder or something suitable for the size of your gel with a known amount of solution in your case probably ethanol. Then add the hydrogel and check the change in volume.

If the sample is small, liquid displacement method may not work. I think.
Then, I do suggest you to read the following article:

Finally, SEM images may be also helpful to measure the porosity.
