I'm doing a formulation with etanol and water, but to proceed with the experiments i should get rid of the etanol in the mixture. Having this, I ask if there is a technique to evaporate the etanol in the solution at room temperature?

You have reached the azeotrope here - you can only do this chemically, I seem to remember by using benzene. Evaporation will not work for this.
