I was wondering what is the significance of mh+ and mh- and other ionizations are in mass spectrometry. It would be great if someone can give me to an easy explanation/lead me to any helpful reference.

If you type a peptide sequence into the MS/MS Fragment calculator, it will give you the MH+ value for the peptide along with those for the various CID fragments. And you can even add modifications.
