Hi all

I am currently embarking a project to determine saponin content in oily seeds, I have been looking at various literature methodology and according to available data in the literature, water, methanol and ethanol have been extensively utilized in the extraction of saponin from the plant sources. From my knowledge, saponin is soluble in water (hence foaming), so is there any reason why methods still use ethanol/methanol to extract the saponins? Or does it depends on the plant source?
