I have made methanolic extract of a specific flower to use as antioxidant in frying, but the moment I added it to the hot oil, it burned, while many papers have used the extract in temperature of 180 C for many hours, why this happened for me? I know it might be because of sugar content, but I am sure the extract which they have used in  other papers have sugar too, but non of them had reported this. I appreciate if you share your experience.
