Despite I repeat it three times to get DNA from the Einkorn. I couldn't take high amount from it. Could it be related to its cell structure? or I doing some mistake?
Note: The protocol had been used for long time and got the good results from the others type of plants, previously. (CTAB PROTOCOL)
DNA extraction from plant tissue can vary depending on the material used. Essentially any mechanical means of breaking down the cell wall and membranes to allow access to nuclear material, without its degradation is required. For this, usually an initial grinding stage with liquid nitrogen is employed to break down cell wall material and allow access to DNA while harmful cellular enzymes and chemicals remain inactivated. Once the tissue has been sufficiently ground, it can then be resuspended in a suitable buffer, such as CTAB.
I suppose you are just facing the problem that you could not break the cells well enough to get the DNA out of cell. I would suggest you to increase the time and strength of grinding/bead-beating (with liquid nitrogen) as grass cells could be bit tough due to the presence of silica. what kind of sample are you using, please use the young/tender part which will give you better DNA yield.
Without knowing more specifics, most difficulties in getting DNA out of plant cells is due to the cell wall. I've had good luck with cycles of freezing and thawing, mechanical grinding, and not starting with too much plant material. If your samples are dried or really tough, let them soak in the first buffer in the kit to soften up before your start.
Also, make sure that all of your reagents are fresh and not expired.

In order to purify DNA, insoluble particulates are removed through centrifugation while soluble proteins and other material are separated through mixing with chloroform and centrifugation. DNA must then be precipitated from the aqueous phase and washed thoroughly to remove contaminating salts. The purified DNA is then resuspended and stored in TE buffer or sterile distilled water. This method has been shown to give intact genomic DNA from plant tissue. To check the quality of the extracted DNA, a sample is run on an agarose gel, stained with ethidium bromide, and visualised under UV light

the protocol is relatively sensible to salt concentration, may the growing conditions of your plants would give salt excess?
