I am familiar with UCSC Genome Browser and NCBI. But other than the few examples that are found in main stream Genetics textbooks, I cannot find papers, or a website, that displays, holistically, everything starting from structure of the gene (which part of the sequence is the promoter, intron-exon junctions, terminator sequences, etc), how that gene is expressed (which sequences act as enhancers/repressors, what factors bind those sequences, conditions, etc), and the function of the RNA or protein produced.
Does anyone have any suggestions of where I can find this information? This would be an excellent resource for teaching.
I agree that this would be an excellent resource, although the task is daunting. Gene regulation seemingly occurs at so many levels that it would take an entire course just to cover the basics (e.g. transcription factors, methylation, histone modification, post-transcriptional modification, etc.). Nevertheless, I remember reading a nice overview by Hardison and Taylor in Nature, but this review was mostly to discuss cis-regulatory module prediction, which of course is only a piece of the puzzle. I would probably also look at Suryamohan and Halfon's article on the same subject (some links below).
Essential Cell Biology put out by Garland Science does actually have a pretty nice chapter devoted to gene regulation that provides an overview of most of what you are looking for, although obviously at textbook depth - so it depends on your goal.

That's a very broad aim indeed. For general info, I usually turn to genecards.org, which compiles data on multiple aspects of any given gene. For me it usually serves as the first point of search and then I just follow the links to the direction I hope to find my answers.
Another place that might be of use is biogps.org, which also has a possibility to create your own output templates for your searches (Arrayexpress, Wikipedia, Nature databases, NCBI, etc).
The Saccharomyces Genome Database (SGD) has information summarized for all yeast genes. Tabs at the top of the webpage for each gene give information about the genomic sequence, protein, annotation, genetic and biochemical functions and interactions, regulation, and expression. To my knowledge, this is the best database for complete information about individual genes.

To understand the basic of gene regulation we must focus on textbook of genetics , the other resources give examples for one aspect but not the complete picture
