I made two experiments to form an emulsion from microcapsules and used two different kinds of surfactant. In the first experiment I used sodium dodecyl sulphate (SDS), it is a anionic surfactant, and in the second one I used tween 80 which is a nonionic surfactant. Then I examined the microcapsules resulting in the emulsion by optical microscopy, but I did not find any remarkable difference between them. What is the effect of surfactant on microcapsules and what is difference between microcapsules in both experiments?

Capsules can be formed from one film-forming (gelatin), which plays the role of film-forming and surfactant. Perhaps your capsules are formed from film-forming and surfactants. If the film-forming has a charge, then ionic surfactants will differ in non-ionic surfactants during capsule formation.

In fact I am using ammonium phosphate as the core material, gelatin and sodium alginate as shell materials, they will react with each other by complex coacervation, gelatin has a cationic charge and sodium alginate has a anionic charge, so is it better to use the nonionic surfactant in this case?
