Upon tissue plating for cell isolation, I start to see fibroblasts and after a while these 3D structures start to form. Are they called stroma? Someone in my building told me that she calls them that, but isn't sure about the term. Thanks!

It is hard to call it as "stroma". Probably, these fibroblasts are getting collected around of small tissue pieces. Otherwise, after some time you should see a lot of stroma and increased thickness of cell layer on your tissue dish. Sometimes, it also happens when these cells form some spheroid aggregates due to high confluency.
