There has been a body of research studying the effect of different factors on milk fermentation; the symbiotic relationship between M.O.s fermenting milk, milk composition, heat treatment, inhibitory substances (antibiotic residues, detergent residues, ...), packaging material and so on. But so far, I have not been able to find research studying the effect of container size/head-space on milk fermentation. Therefore, I kindly ask you to share with me any study concerning this factor.
