Change in absorbance is just a method to determine the rate of enzyme reaction, how fast reaction product is formed. The faster the decrease, the higher the enzyme activity. You need to calculate reaction rate (initially as (delta)A430 per minute) at that part of the absorbance curve where it is linear. Further you can express enzyme activity as the amount of the product formed per minute, using extinction coefficient for a particular product and express the activity in respect to fresh mass (as per 1g) of plant material or per unit of protein (as per 1 mg) of your extract.
As for comparison of different samples due to "stress" treatment in respect to peroxidase activity, this can be extremely variable. Usually it is suggseted that peroxidase activity will increase with stress, but at high intensity and/or long duration it can decrease again.
