for the time you just have to mesure the time during 2 mesurements and divise the result by this times in minuts. For the fresh weight you just have to weight your sample first.
To put the result in μmol it depend if you want it by μmol of enzyme, or by the μmol of product prodiuce by the reaction. In the two cases you need product do make a standard curve
