I started a few months ago a series of batch and fed-batch fermentations with my isolated strain (Aspergillus)
The fermentation conditions that I've followed are biomass formation, pH, DO, and substrate consumption (corn xylan),
My question is, is there any equation or mathematic model that links the enzyme production and the substrate consumption, in this case, xylanase production.

When I worked with Aspergillus, our interest was obtaining cellulases. This was the equation we used to determine enzyme activity:
EA=[((CMC-ART)/Mgluc)*1000/tr]*DF
where:
EA: enzyme activity
(CMC-ART): Difference in concentration between the ARTs that result from the activity of the enzyme against the CMC substrate and the ARTs present in the crude.
Mgluc: Molar Mass of glucose
tr: reaction time
DF: dilution factor

The kinetic models of Gompertz (modified) and Luederking-Piret could solve your problem. However, in my last article on kinetic modeling of a microbial production process, the logistic model was the best.
