I'm using the Sensiscript Reverse Transcription kit from Qiagen which recommends that but I've also been told that it's not necessary as long as I work in a RNAse free environment thanks to appropriate materials (filter tips, PCR tubes...) and precautions (use of RNAseAway, gloves for instance). What do you think?

you are totally right, as long as all materials are RNase free there is no need to use RNase inhibitors. Except for very expensive experiments I never use RNase inhibitors and never have any problems regarding degradation due to the handling. I am even not using RNaseAway, but only EtOH 70% for cleaning of surfaces and pipettes.

I always add the RNAse inhibitor. The yield of the reaction is increased. For rare transcripts or difficult applications, I recommend to use the Superscript IV RT kit (Invitrogen/Fisher Scientific).
