I added the pediocin to meat and cheese product in Iraq. I testing the productions invivo (muse) but it was not any effects in animals and increased immunological properties.
The commercially used bacteiocins are nisin and its derivatives such as lactocin,lactacin....etc which approvesd as generally Regarded as Safe (GRAS). Also pedicins of Pediococcus acidilactici and its derivatives. Plantaicins of L. plantarum added recently in vegetale fermentations and preservation.
I am sure that nisin is autorished by EFSA but I do not find any official document where pedicins appear autorished ...... Maybe its use is like microorganism and not like additves as nisin ?
