I think that this will be a difficult experiment to do well - particularly for 2 reasons:

Firstly, ox modifications will generally be non-stoichiometric and very often quite randomly distributed in the proteome. To my knowledge, there are no good enrichment methods for oxidatively modified proteins.

Secondly, during sample preparation in proteomics, further redox events will occur (that will obviously not have biological significance). It is not easy to separate these from the biological redox events.

I think that the two reasons above both contribute to the low number of high quality papers detailing oxidative damage of proteins at a proteome level. It might be a bit easier to assess how cells (or subcellular organelles) react to oxidative stress by modulating protein expression. This could be addressed with quantitative proteomics (such as SILAC or isobaric labelling techniques).
