For the analysis of minerals usually tibia bone is selected in poultry/quail.what is logic behind it?
I can think of two reasons:
1. it is easily obtainable
2. the tibia is an active part of the body so the bone is probably good mirror of the total (mineral) status of the animal.
Tibia is an easy to extract part of the body.
Most researchers have worked on tibia, so you can find lots of citation options.
It can give you some time to work on.

Ease of removal and the fact that tibia bone is an active site for mineral metabolism especially Calcium and Phosphorus.
