I am working on ultrasound assisted extraction on ginger, the solvents type included in my study were ethanol, methanol and distilled water, what explanation is there for i get highest TPC and TFC (phenolic and flavonoid content) using ethanol as solvents. as i found out that methanol should have higher dissolution.

May be ultrasound assisted extraction procedure, time and temperature effect the TPC and TFC Yield.
Due to the different polarities of various solvents. And type polyphenols in your material easily dissolve in ethanol and they have the high antioxidant capacity
Ethanol/methanol are much better solvents than water for polyphenols especially. It is the nature of the molecules. Many are barely soluble in water. I would also try extracting in acidified solutions (0.1% HCl) because many polyphenols are more stable in acidic conditions.
