Currently I am trying to find out which proteins apart from chlorophyll are broken down or relocated during leaf senescence to explain seasonal changes in carbon, nitrogen, oxygen and hydrogen in leaves.
For chlorophyll it is clearly understood and presented in a detailed way, e. g. Article Chlorophyll degradation during senescence
.Other sources I found just talk about "proteins". But I would like to know their specific names. Can anyone recommend literature to find out more?

I would search on the term "proteomics" in combination with "(leaf) senescence" to identify more specific proteins which are likely differentially down-regulated. You could add other terms like "season" or "(deciduous) trees".

Now I am trying to figure out the chemistry of "major latex protein-related (IPI00531983.1) Q9SUR0", "Glutathione S-transferase" etc.. There are some sum formulas for RuBisCo molecules (e. g. from spinach), but the other ones seem to be quite complex molecules that are identified differently.
As I want to explain changes in the chemistry (C, N, O, H), that's what I am looking for. So far I can compare cellulose, lignin, chlorophyll, RuBisCo, but it is difficult for me to see what even a "major latex protein-related" component is.
