Are there any biophysical models simulating activity traveling through some fibers (or fascicles) and how this would project on the surface? If there are no details models, what would be an educated guess, based on depolarizing currents moving along the nerve? What would the differences be when recorded with a monopolar or bipolar electrode? Could we derive any information on speed or direction of this activity, based on the shape of these compound action potentials?

You need a minimum of 3 electrodes on the nerve to determine direction based on phase. The sampling rate should be high, the stimulus short (100 us) if the stim electrode is on the same nerve, and the sensing electrodes well spaced and insulated extracellularly (air, cuff, or oil).

I should have mentioned that while the first resource I gave you is for ex planted nerves from frog, the monopolar/bipolar concept is the same in vivo in mammals.
Thank you Thomas, very helpful resources. I understand that 3 electrodes would be used in a setup for a stimulation induced CAP, however if we are trying to isolate and separate the direction of baseline (or physiologically induced) CAPs from in vivo nerves, 2 electrodes sufficiently spaced and with a high enough sampling rate should be enough to identify the direction and speed of sorted CAPs.
