I'm not particularly familiar with EEG approaches, but from the literature I understand Fieldtrip is a powerful tool to analyse these kinds of signals (also MEG and LFP-spiking data, btw). You could check them out as well as the plethora of papers that use it. More specific to your question, I thought maybe this link would help:

You can check it out and dig into further into Filedtrip from it. I understand it's a pretty powerful toolbox.

Alternatively, perhaps EEGLab does the job (not really sure about how many available tools this one has regarding signal processing). Here's a paper that calculates inter-electrode coherence, where they used EEGLab.

That one is open access, so you probably won't have problems checking it out.

For analysis, in case you're to run the coherence yourself (instead of using a toolbox), maybe this paper could be interesting too,
