What are the parameters most required? For liver is there anything more than AP, ALT and AST? And for kidney anything more than Creatinine and Uric acid?
-Osmolality (or specific gravity, however this parameter is not always a good estimate of urine osmolality)

-perform kidney panel which usually includes creatinine, BUN (Blood Urea Nitrogen), Albumin, Total Protein, Phosphorus, Potassium, sodium, Calcium and Chloride;
Analyzing results it's crucial to refer to reference intervals assessed for a given strain of mice/ age/ gender. Apart from literature data it's useful to establish your own reference values, based on results of healthy individuals that you keep as a control group in your lab/facility.
