I have been scouring the internet to search for ways to track the interface in VOF multiphase flow modeling using UDF in Ansys Fluent.
Looking for some suggestions from researchers here as well. If anyone has used UDF to mark the interface or can suggest the best way to do it

The volume fraction is the variable you need to monitor to define an interface.
Or do you want to create a new variable to do it?
Always I want to define the interface, I do create an isosurface (3d) or a Coutour line (2D) with some volume fraction value. e.g . a well defined and sharp interface we can use volume fraction = 0.5. It is arbitrary. For low fractions and dispersed flows, we choose a "good" value ( VOF is not recommended to this kind of flow, but we can use it)

Now evaporation is a surface dependent phenomenon. So correct interpretation of the droplet surface is necessary.
Should we consider all those cells where the volume fraction of secondary phase is neither zero nor 1? Or should we consider the droplet interface when the volume fraction is between 0.5 to 0.7 say?
is the choice of VOF gradient a better option or should we take a call based on the mass fraction? I am attaching an image of the simulation
