Distillation is NOT a good way to accurately estimate ethanol!
I would recommend GC with a flame ionisation detector (GC-FID). Small sample sizes can be analysed and good separation from other alcohols (eg methanol) means that the method has good specificity as well as being reasonably reproducible and accurate. If you do an on-line search you will see there are lots of applications notes from various chromatography companies.
It is better to sperate the solid unfermented crystaline cellulosics fibrers via centriguation or filter peper , then do distillations as recomended aboove.Then use water to extract etnanol estimate via chromatigrafics , later do mass balances to validade and verify too
