What are some ways to prevent yellowness from MDI when synthesizing thermoplastic polyurethane?
It will change color over time after synthesis.

Most discoloration is due to UV light so I suggest that if it's possible, attach a layer that removes UV light effect.
Discoloration usually comes from oxidation. So I would sugggest
1. exclude oxygen from synthesis (unless unavoidable)
2. add a stabilizer (antioxidant)
3. avoid high temperature as much as possible
4. add additives that make the material less susceptible, e.g. carbon black blocks sunlight and thus reduces oxidative aging
5. Milad Atighi 's suggestion is correct too
It is all a matter of what you want to prevent exactly
