You have to select the reaction force at the fixed position exactly opposite direction where you applying load tensile or compression it may be. Get the reaction force values and deformation values from the table.

You can create Load vs Deflection Curve by selecting force reaction and displacement at the same time and clicking at Chart select axis X displacement and Axis Y force.

If you apply force, the time will be a linear parameter with the time so you can only evaluate the displacement time relation and convert the time to load

if you apply displacement, use the following steps

1-Create probe for the reaction.

2-Create probe for the displacement

3-Create chart using 1 and 2
