I'm trying to demonstrate the droplet generation process using water in oil system in microfluidic chip, aiming to do cell culture experiments. Generally, surfactant should be added into the oil (here FC-40 is used as the oil) to form a more stable oil-water interface. While, I don't know what kind of surfactant is suitable for my case. Do you have some suggestions?

Nice question! If I have understood correctly, you want to make a stable emulsion of water droplets in oil phase, right? If yes, I would say that the parameter that determines if a surfactant is suitable for use in water-in-oil or oil-in-water emulsion is its HLB number. If 8
