Actually, I want to capture the finger-shaped instability in the case of miscible two-phase displacement flow. VOF model is used to capture the interface of immiscible fluids. Any model is available for miscible fluids in ANSYS FLUENT software.

You can use any property contours (density, viscosity, molecular weight etc.) to keep track of the interface.
It is not possible to track an interface between two MISCIBLES fluids because there is no interface. If they are miscible you have ONE MULTICOMPONENT fluid, that is, a MIXTURE composed of two components. It is ONE FLUID with variable properties due to diffusion and advection - and reactions if applied - of chemical species.
The basement of two-phase flow is that there is an interface, even in dispersed flow such bubbles and drops, but in an AVERAGED framework the set ENSEMBLE of these particles behaves such like a continuous phase, but in this case, the interface is smeared, diffuse and not so sharp such as in free-surface flows. The morphology is accounted for by the closure models for Drag Force, for example.
