For Amira there exists the extension "XImagePAQ" (which is included in standard Avizo).

Amongst other things, this extension provides the module "Label Analysis", with which you can analyse label-fields either in 3D or slice-wise (2D). You have a choice of pre-defined measures, but you can also create your own from the existing ones.

In amira you could segment the different structures, in your case the cells, and then you can measeure the volume of each segmented structure, here is a helpful guide : http://www1.udel.edu/ctcr/sites/udel.edu.ctcr/files/Amira%20Users%20Guide.pdf ; under section 2.4 Segmentation of 3D Images you also have under point 2.4.2 (page 42) the describtion how to get the volume.
