Can anyone recommend studies/books that have explored the ways in which gratitude facilitates post-traumatic growth? I would like to see if reminding oneself to be grateful be an effective way of coping with difficult life situations.

You may also want to check, for interventions in children with serious illnesses:

Others have done a great job of providing relevant literature; I would add that traditional PTG research has documented Increased appreciation for daily life as one of the five overarching domains of growth, manifested as recognition of things that might have once been taken for granted (Tedeschi & Calhoun, 1996).
I also add below another valuable article on the topic by Vernon et al (2009). And this is an interesting and relevant link: http://psikologi.ugm.ac.id/uploads/resources/File/Database%20Penelitian%20Dosen/merapi.pdf

I have just completed my dissertation research on that very topic! In the discussion I refer to Positive Psychology, and Post Traumatic Growth. I also mention the work of Calhoun and Tedeschi, Barbara Fredrickson, and Robert Emmons. It is a cross-cultural grounded theory, mixed-methods study. Please feel free to download it from my research gate page and let me know if you have any other questions. The references will be very helpful to you...some are mentioned in this discussion thread and there are many more connecting gratitude and post traumatic growth!
The participants spoke strongly on how gratitude plays a very strong role in their daily lives but particularly when faced with challenging life circumstances such as loss.
