Tomato water is evaporated during the paste production process; thereby, the evaporated water is condensed which can be reused in the system.
Do you have any data or information on the quality of the condensed water? (especially on Vacuum Evaporation method).

To return to your question, it all depends on what you call "evaporated water". If it is only water, it is obviously H20! If, on the other hand, other volatile substances, as is likely, are carried away by the water vapor, then it is more complex. Either you want to know the composition of the evaporate, or you are looking for a particular molecule. In the first case, you have to do a gas phase analysis, in the second case, you can use specific reagents to detect the ancillary substances. Since you don't say what you are looking for, I can only stay at this level of banality.
