I use the High Fidelity Plus Taq Pol from Roche. It works well.
I think you need to use a "good" enzyme that process degraded DNA, because the quality of gDNA after chemical bisulfite treatment is poor.
I use RedTaq from Sigma and also works well. Also, it has dye incorporated so you can use the PCR product directly for gel afterwards.
A quick word of warning- remember that bisulfite converts C to uracil, so you must find an enzyme that is able to read U. Some high fidelity pol are not able to do this, so read the product descriptions carefully and call the company to make sure. I'll follow up with a few suggestions soon.
Kapa biosystems makes KAPA HiFi Uracil+ specially designed for bisulfite converted DNA.
Maxima Hot Start Taq DNA polymerase from Fermentase works very well for genomic DNA that is bisulphite treated using the EZ DNA methylation gold kit from Zymo research. You can amplify products over 1kb in length with this combination.
