Why is it required to block mucin in in vitro adhesion tests?

There are many possibilities to block mucin in adhesion assays : BSA, skim milk, Tween 20,... but I cannot understand the basis of doing this. Could anyone help me?

Why are we blocking mucin in bacterial adhesion tests? I mean, we block mucin in in vitro probiotic adhesion tests but I don't know if this is correct.
