Let us take the case of a channel made up of a solid material. The fluid flows in the channel. While setting up the case, we need to create a coupled wall between the solid and the fluid surface. Also, there are few cases where we don't need to create interfaces at all. Why is it so?

i assume you are using the ANSYS Meshing Utility? This will automatically assume mesh contact regions if you import multiple parts and I assume this is done because its the most robust way.
To avoid this you have to tell the mesher that you want a consistent mesh. This is done by putting all of your geometry into one part. If there are adjacent non conform adjacent surfaces ANSYS Mesher will then try to split into their least common surfaces so that only "one" wall is between the cell regions.
So if you are sure that intersecting the surfaces to their least common surfaces will not lead to surfaces, which will produce "bad cells" you may try putting them into one part (for example in the Design Modeler), but there may be cases where automatic intersection will not work (or work badly) and you have to put some work in your geometry in order to generate a consistent mesh.
