I want to simulate with Ansys fluent refrigerant flowing into a pipe and this refrigerant will be heated and evaporated.
I want to know which model will be compatible with my case (VOF model or Eulerien,...).

I think VOF model is better. In addition, you can use TPMM model for simulation of two-phase flow and evaporation process if you have a porous medium inside the pipe.

Personally I have used VOF with good results, so I can recommend it. I have been using OpenFOAM though.
Check the cell size is not too big, particularly near the wall.
I would personally recommend Eulerien. Something with a mixture model that includes evaporation/condensation mass transfer. It will be less computationally expensive as it won't be interface tracking so it might not give the level of detail you are looking for. It works well enough for me with cavitation models though.
I think mixture model is sufficient for which you have not to deal with tracking exact interface shape via high computational cost VOF model!
