I want to extract phytochemicals as well as carbohydrate and protein from dried plant material. Is water is proper solvent?

use methanol and chloroform .
My group uses mainly methanol. However, ethanol, hexane and acetonitrile are also used and depends on the structural nature.
You got to do trial and error to find the best match for yours.

Methanol is the best solvent
