Alpha-amylase has a roving action on starch molecule. Its is an endo-acting amylase that hydrolyze alpha-1.4 glycosidic bonds within the starch molecule. because it roams the entire starch structure, its major breakdown products include short chain oligosaccharides in the vast majority of cases. Maltotrioses, tetrioses, pentatrioses, maltose and down to glucose as well as dextrin could be accumulated by the enzyme. It's action is therefore not very specific. However, glucoamylase has a more specific action which involves accumulation of glucose specifically. It is an exo-acting amylase which hydrolyze terminal alpha-1,4 bonds in starch molecule.
