My SOLID65 element is reinforced concrete but what modulus of elasticity and material properties do I put? For nonlinear analysis
It depends on what is you're assumption about material in the element. If your problem deals with uni axial compression then consider bi-linear curve with appropriate limiting factors specified by your reference code(ACI or BS or Any other) and for Steel it may be considered as linear upto yield value (Again with limiting factors) and later on constant.

Concerning 'graphs', you may use a multi-linear plastic curve input (tension cut off is already there later in the definition)
Concerning modulus of elasticity, put the slope of the first segment of the multi-linear plastic curve provided.
Concerning how to orient the smeared reinforcement, I think the attached picture conveys better than words.
