Many free radicals formed from daily metabolism trapping electrons from phospholipids of cell membrane in order to form a pair of energy-stablized spinning electrons, in this situation, phospholipids are being broken down to form arachidonic acid, which is the first molecule in the cascade of inflammatory processes. Therefore, the antioxidants function in providing prenty and abundant amount of electrons for free radicals to go after or trapping to form stablized electron pairs, this prevent the process of damaging the phospholipids of the cell membrane; thus, no or few arachidonic acid is formed and no inflammatory process is initiated.
The free radical can stimulate the production of prostaglandins and cytokines by stimulating the COX and NFkB respectively which are pro-inflammatory in nature. The anti-oxidants scavenge the free radicals, supress activation of COX and NFkB and contribute to anti-inflammatory action indirectly.
