I don't think Fehling reagent would be useful for this purpose since lactose is a reducing sugar, therefore able to react with Fehling's reagent, just as their hydrolysis products (glucose and galactose). Thus, it would be difficult to distinguish between substrate and products,
What is a lactose mineral medium? If both lactose and lactase are there you would need to separate lactose/galactose/glucose from lactase. I would use a gel filtration kit to do that.
