In general, you can process data by ANSYS (RESULTS), or you can also export it to other programs such as Tecplot.

That is nice but not what I meant. You see I want to have full control by

picking up each datapoint myself!

So, you can export data and control it by EXCEL. Using EXCEL you can process each point (if you have a curve, for example, all values will appear and you can modify them as you like).

You can monitor points as per your choice at the desired locations and set a recording frequency in terms of iterations/time steps as needed. The data file will be saved as text file that can be treated further in MS Excel.
