Starch is a hydrophilic polymer and chloroform is organic solvent with polarity index of 4.1. The literature mentioned that starch is not soluble in alcohol, in which the polarity index is within 3.9-4. However, starch can dissolve well in hot water (PI 10.2) instead of cold water. Another literature, dissolved starch in chloroform below the chloroform boiling temperature (60 deg. Celcius). Hope someone can explain further regarding this matter and is the application of the temperature assist the solubility. Thank you in advance!
